Clodagh McKenna Herbert on Instagram: "One Pot Whole Chicken Casserole 💚 INGREDIENTS: 1 medium whole chicken 50g butter 2 onions, cut into wedges 5 carrots, peeled and chopped into large pieces 5 parsnips, peeled and chopped into large pieces 1 bulb garlic, halved 4 sprigs thyme 6 potatoes, halved if large 175ml dry white wine 500ml chicken stock Sea salt and black pepper Juice of ½ lemon METHOD: 1. Preheat oven to 180°C fan. 2. Melt the butter in a large casserole pot over medium heat.
